 Among other “low carbon” strategies like cutting purchases of tropical fruit in half, Bon Appetit’s Low Carbon Diet reduced purchases of beef by 33% and cheese by 10%. Additionally, Bon Appetit reduced food waste by about one-third. Through these combined efforts, the company has decreased its GHG emissions by about 5 million pounds each month
