LeanPath and Gundersen Health Systems

Gundersen Health Systems, a 325-bed medical center in Wisconsin that serves about 2,700 patient, staff and guest meals daily, used LeanPath’s Food Waste Tracking System to measure its kitchen waste, make changes, and ultimately reduce waste by 50% (by weight) in seven months. At the beginning of the effort, Gundersen was generating half a ton of food waste each week. In response, staff changed vegetable preparation techniques, began heating soup in smaller batches, and implemented other strategies to reduce the wasting of food. Between July 2010 and February 2011, they cut pre-consumer food waste in half by weight, and saved $475 in food purchases weekly.
